Ingredients:

400 grams cooked white rice

100 grams anchovy (teri nasi), fried until crispy

1/2 onion (thinly sliced)

2 large red chilies (thinly sliced)

2 cloves garlic (thinly sliced)

5 shallots (thinly sliced)

2 tablespoons tomato paste

1 teaspoon sesame oil
-
200 ml cooking oil (for frying and sautéing)
Instructions:

Fry the Anchovies:

Heat about 100 ml of oil in a pan.

Fry the anchovies until golden and crispy. Remove and drain.

Sauté the Aromatics:

Remove some of the oil, leaving about 2–3 tablespoons in the pan.

Sauté shallots, garlic, and onion until fragrant and soft.

Add the sliced red chilies, stir-fry until slightly wilted.

Add Tomato Paste:

Stir in the tomato paste, mix well until evenly combined.

Add the Rice:

Add the cooked white rice, mix thoroughly with the seasoning and tomato mixture.

Season:

Drizzle with sesame oil and stir well.

Taste and adjust seasoning (add a pinch of salt or seasoning powder if needed).

Add Anchovies:

Add the crispy anchovies to the rice and mix well. You may reserve some for garnish.

Serve hot with a sprinkle of anchovies on top for extra crunch.
